lacha shemia

Lacha Shamai is a traditional Jewish dish often associated with the Jewish communities of Iraq.

**Ingredients:**

- Chicken pieces (usually thighs or drumsticks)

- Basmati rice

- Onion

- Garlic

- Turmeric

- Cumin

- Paprika

- Salt

- Pepper

- Chicken broth or water

- Vegetable oil or schmaltz (rendered chicken fat)

**Preparation:**

1. **Chicken Preparation:** The chicken pieces are first seasoned with salt, pepper, turmeric, and paprika. They can be browned in oil or schmaltz before adding them to the rice, or they can be added directly to the rice for cooking.

2. **Rice Preparation:** The rice is washed and then sautéed with chopped onions and minced garlic until slightly translucent.

3. **Combining Ingredients:** Once the onions are soft and aromatic, the seasoned chicken pieces are added to the pot with the rice.

4. **Spices and Liquid:** Cumin is often added for its warm, earthy flavor. The pot is then filled with chicken broth or water, enough to cover the rice and chicken.

5. **Cooking:** The dish is cooked on low heat, covered, until the rice is fluffy and the chicken is tender and fully cooked.

6. **Serving:** Lacha Shamai is typically served hot, garnished with fresh herbs like parsley or cilantro. Some variations might include adding toasted nuts, like almonds or pine nuts, on top for added texture and flavor.

Lacha Shamai is a hearty and flavorful dish that reflects the rich culinary heritage of Iraqi Jewish cuisine. It's a great comfort food, perfect for family gatherings or special occasions.
